Ten years ago, I noticed there was a void in the flavour market of the vegan lifestyle. Inspiration led me to start creating plant-based recipes with authentic Caribbean flavour.
With my children as my first critics, I realized I had something going on because anything that kids like….. adults will follow.
I first began my culinary journey studying at a vegetarian college in Mandeville, Jamaica. There I observed an abundance of vegetarian dishes that did not include the full spectrum of nutrition, especially for someone plant-based like myself.
Calling on the ancestral memories and flavouring that Caribbean people know so well in the seasoning of their daily meal, I began to diligently formulate a menu to fulfill the void.
Migration took me to Toronto, where I worked alongside Red Seal chefs. The struggle was relentless in working for someone, I realized, and with the vision I had of the future of food, the only true freedom would come with owning my own spot.
We launched Veggie D’Light through the Stonegate Farmer’s Markets and community catering, then opened our doors to the first location in Kensington Market in 2015.
Now, with the wisdom of practice, I am happy to have expanded upon an insurmountable number of vegan dishes I would love to share with you.
